About
Before lab results, meal plans, or protocols, I begin with you; your lived experience, your biology, your relationships, your work, your stressors, your season of life.
I am Jan Tortarella, MS, RD, LDN, IFNCP, MBEAT-P, founder of One Nutrition, LLC. For more than three decades, I have walked alongside people and the professionals who care for them, through illness and recovery, loss and transition, burnout and renewal.
Over the years, my work as a clinician, educator, and systems improvement professional led me to a pivotal realization: symptom-based care is not enough. I gradually shifted from focusing primarily on “what is wrong” toward a deeper curiosity about “what matters most” in a person’s life. I’ve shifted from chasing symptoms to understanding the broader ecology and biology of a person’s experience.
This systems-based perspective showed me what genuine whole person care can and should look and feel like. It taught me that effective care and support must honor not only the body, but also the relationships, environments, daily demands, and sources of meaning that shape health.

There is only one you.
One body. One mind.
One spirit. One story. One life.
During my three decades in healthcare, I’ve cared for people across acute care, long-term care, government health agencies, wellness programs, and end-of-life settings and I’ve seen the complexity of health from many perspectives. I’ve witnessed remarkable recoveries, sat with families in profound moments of loss, supported professionals navigating burnout, and helped teams create greater clarity within complex systems. Across every setting, one truth has remained: behind every diagnosis is a person, behind every symptom is a story, and behind every system are people doing their best within it.
How I See the Whole
My work weaves together:
-
Functional and integrative nutrition that examines root causes of health conditions
-
Mindful and intuitive eating principles
-
Lifestyle focused awareness (nutrition, sleep, movement, stress, relationships, purpose)
-
Approaches that support stress resilience and nervous system balance
-
Mindfulness-Based Eating Awareness (MB-EAT)
-
A gentle, relationship-centered style of care that honors emotional experience
-
Calming, presence-based practices that offer space for stillness and reflection
These are not separate “add-ons.” They are different ways of understanding the same whole.
I never start with a diagnosis, lab value, or protocol. I start with you: your story, your strengths, your challenges, your hopes, and your life as it is right now.
One Nutrition is grounded in the belief that healing is not about becoming someone new.
It is about remembering who you have always been and coming home to yourself.
Why I Work This Way
Early in my career, I focused on symptoms and finding the “right nutrition prescription.” Over time, I saw its limits.
People are not lists of problems to solve. They are whole human beings living within complex personal, relational, organizational, and environmental ecologies.
My approach evolved from trying to correct individual symptoms to exploring the bigger picture of a person’s life; what they value, how they live, the pressures they face, and the supports they can lean on. I learned to see each person as the center of their care, surrounded by the relationships, environments, daily structures, and sources of purpose that influence their wellbeing.
These experiences deepened my conviction that:
-
We cannot separate people from the lives they are living.
-
We cannot separate healing from the context in which we live and work.
Today, I bring this integrated mindset and three decades of clinical experience, systems thinking, and advanced functional nutrition training combined with integrative and contemplative practices directly to you.
